Tapoica / Javarisi Mixer

Here is the super-easy recipe for tasty snack.Treat kids or unexpected guests with this healthy snack. Store it in airtight container for any-time use. 

Ingredients

  • 2 cups Tapioca/Javarisi
  • 15 nos Cashew nuts
  • ¼ cup Peanuts
  • 2 twigs Curry leaves
  • ½ tsp Turmeric powder(optional)
  • 1 tsp Salt or to taste
  • Oil for deep frying

Method

  • Heat oil in a pan; Gradually add tapioca; fry well.
  • If you like turmeric powder, add into the fried tapioca; mix well.(if you don’t like skip this step).
  • Fry peanuts, cashewnuts, curryleaves in the oil.
  • Mix everything together with salt.
  • Give this snack to kids in the name of ‘Pearl Mixer’

Note

  • Jazz it up with ¼ cup oil fried roasted gram dal.

How to make Sprouts?

Making Sprouts as easy as 1.2..3…

I like sprouts if someone made.I never tried myself. After I spoke to my friend Sharmila,I was thinking of make myself.But, I didn’t take care of that much.
 
When I read Sprouted Moong Bhel recipe from chutney’s I made myself promise I’m going to soak it tonight. I asked steps from my friend;I bugged her lot with so many silly questions…I don’t know why I didn’t google it….I made sprouts finally!!!

 One word of caution: some beans such as kidney beans should not be eaten raw as they contain enzymes and need to be cooked well in order to make them safe.more… 

Ingredients

  • 1cup Whole Green Moong Dall
  • Water for soaking

Method

1.Wash and soak moong for overnight.
2. Next night drain the water; keep them in a bowl for overnight.
3.Nextday we can see sprouts looks like above.

Note

  • You can keep one more night if you want more sprout.
  • store it freezer bags and store them in the refrigerator.

Masala Vada – Paruppu Vadai

This masala vadas are mouth watering delicious snacks for all occassions.For a cup of tea with hot masala vadai no one never says “No”.Here is the simple recipe for delicious snack.
Ingredients

  • 1 cup Bengal gram/Gram dal
  • 1 tsp Fennel seeds
  • 2 tsp Ginger Garlic Paste
  • 2 Green chilies, chopped
  • 1 twig Curry leaves
  • 1 cup Onion , chopped
  • 2 tsp Salt or to taste
  • Oil for deep frying

Method

  • Wash and soak dal for 3-4 hours.
  • Keep 2 tbsp. dal aside for later use; grind the rest, coarsely without adding water.
  • Mix all other ingredients(onions,green chilies,fennel seeds,ginger garlic paste,curry leaves), including whole dal.
  • Heat oil, make pattie shaped rounds with moist palm.
  • Let carefully into the hot oil.
  • Fry first one side then the other till golden brown.
  • Serve hot with green chutney, tamarind chutney, ketchup or hot tea.
Note

  • Once it is turned to golden brown remove it from oil and keep it on tissue paper to remove the excess oil.
  • Jazz it up with chopped spinnach and 1/2 tsp garam masala.

Strawberry Bread Recipe

 

Here is the easy recipe for luscious bread.

Ingredients

  • 12/3 cups All Purpose Flour
  • ¾ cup Sugar
  • ½ tsp Salt
  • 1 tsp. ground Cinnamon (optional)
  • ½ tsp. Baking Soda
  • 2/3cup Pecans chopped, and toasted (optional)
  • 2 large Eggs
  • ½ cup Canola/Vegetable Oil
  • 1 cup fresh Strawberries, hulled, and thinly sliced

Method

  • Preheat oven to 350° F.; butter and flour a 9 x 5 x 3 -inch(or any size) loaf pan.
  • In a large bowl, combine flour, sugar, cinnamon, salt and baking soda; if desired, toss with pecans.
  • In a small bowl, whisk eggs until frothy; whisk in oil.
    Make a well in the center of the flour mixture.
  • Pour in the egg mixture and stir until dry ingredients are just evenly moistened; note, do not over mix.
  • Fold in strawberries.
  • Spoon batter into prepared pan and smooth top.
  • Bake for 45 to 50 min, or until tester inserted near the center comes out clean.
  • Let cool in pan for 5 min.
  • Remove from pan and cool on rack.

White Ginger Bread

This healthy evening snack good for kids. It is very helpful for digestion.
 

Ingredients

  • 10 White Bread Slices
  • ½ cup Honey
  • 1 Tbsp. Ginger, shredded
  • 2 tsp. Orange zest
  • 2 Tbsp. Butter

Method

  • Mix ginger,orange zest with honey.
  • Keep this mixture aside for 30 min.
  • Cut bread slices into desired shapes.
  • Spread butter on top of the bread.
  • Spread the prepared mixture.
  • Keep another slice on the top.

Note

  • Substitute sugar free Orange Marmalade Jam instead of orange zest.if regular jam, use ¼ cup honey.
  • Jazz it up: toast bread with butter

It will work for kids who are picky eaters like my son.Prepare puri dough . Instead of regular round size you can ask kids to cut them by using cookie cutter.They will enjoy cooking and eating too….

Biscotti

Here is the simple recipe for the delicious biscottis.

Ingredients

  • 2 cups All Purpose Flour
  • 1 ½ tsp.Baking Powder
  • ¼ tsp.Salt
  • ½ cup(1 stick) Butter, softened
  • ¾ cup Sugar
  • 2 Eggs
  • 1 tsp. Vanilla
  • 4 squares Semi-Sweet Baking Chocolate, melted

Method

  • Preheat oven to 325°F.
  • Mix flour, baking powder and salt in small bowl.
  • Beat butter and sugar in large bowl with electric mixer on medium speed until light
    and fluffy.
  • Blend in eggs and vanilla. Gradually add flour mixture, beating well after each
    addition.
  • Divide dough in half.
  • Shape each half into 14×2-inch log with lightly floured hands; place on greased
    baking sheet.
  • Bake 30 min. or until lightly browned.
  • Remove from baking sheet; place on cutting board;
    cool 5 min.
  • Using a knife, diagonally cut each log into 12 slices; place upright on
    baking sheet, 1/2 inch apart. Bake an additional 15 to 18 min. or until slightly
    dried.
  • Remove from baking sheet. Cool on wire racks.
  • Dip biscotti in melted chocolate. (Or drizzle chocolate over biscotti.)
    Let stand until set.
  • Serve cool with hot tea; store in tightly covered container at room temperature.

Note

  • For a different look, use cookie cutter to cut desired shape.
  • Jazz it up with Cranberry Almond Crunch Cereal and White Chocolate; mix it well
    with after added the flour mixture.

Chocolate Pretzels

Anyone can make this easy snack for kids. Kids love this kind of snack, ofcourse grown-ups tooo.

Ingredients

  • 6 Squares Semi-Sweet Baking Chocolate*
  • 26 Pretzel rods
  • 2 cups any kids favorite cereals*

Method

  • Place chocolate in 1 cup glass measuring cup.
  • Microwave as directed on package. Let stand 5 min to cool.
  • Dip pretzels halfway into chocolate, tilting cup to evenly coat each pretzel.Scrap off excess chocolate, on edge of cup.
  • Holding pretzels over plate, immediately sprinkle with cereal.
  • Place on waxed paper-lined tray.
  • Refrigerate 15 min or until set

Note

  • * For flavor variations 8 Oreo sandwich cookies, finely crushed
  • *Substitute White chocolate for semi-sweet chocolate

    Coriander/Cilantro Kofta

    Ingredients

    • ½ lb. Potato
    • 1 cup chopped Coriander / Cilantro
    • ½ cup chopped Mint
    • 1 tsp. Ginger Paste
    • 4 chopped Green Chilli (for more spicy can increase the count)
    • 2 tsp. Lemon Juice
    • 1 tsp. Cumin Powder
    • 2 Tbsp. Corn Flour
    • Salt to taste
    • Oil to fry koftas
    • ½ cup Bread Crumbs

    Method

    • Boil potato;remove the skin;mash it completely.
    • Mix other ingredients (chopped cilantro, mint leaves, green chilli, ginger paste, lemon juice, cumin powder, corn flour, and salt).
    • Add ¼ cup of bread crumbs; save leftover for later use.prepare soft dough.
    • Meantime heat oil in HIGH MEDIUM heat.
    • Make desired shapes; roll it in remaining bread crumbs; fry it in oil.
    • Serve hot with tomato sauce.
